My gut reaction would be to just say find sustainability-related data, apply data science concepts to it, and build a portfolio to present to potential employers. But I will also recommend giving yourself a bit of a creative advantage over other candidates in your job search and don’t go looking for explicitly sustainability related data; find something that you can relate back to sustainability, keeping in mind that correlation is not causation, of course…
